Odilia Catalina
Colchado
Mar 22, 1935 — Dec 13, 2025
Encinal
Odilia Catalina Colchado "Cata", born Odilia Perez, was born on March 22, 1935, in Encinal, Texas. She passed away surrounded by love, leaving behind a legacy of strength, resilience, and unwavering devotion to her family.
Odilia spent her life in Encinal, where she and her beloved husband Candelario "Lalo" Colchado, raised their family and built a life rooted in hard work and community. She was a strong and determined businesswoman whose entrepreneurial spirit shaped both her family and the town she called home.
She opened La Tiendita, a local store that became a gathering place for neighbors and a training ground for generations of family members who learned the value of responsibility and hard work at her side. She later opened Roy and Matt's, a family restaurant named after her two oldest grandchildren, where her cooking and hospitality brought people together. During that same time, she also opened AJ's Game Room, named after another grandchild, which added joy and energy to the community.
After the passing of her husband, Odilia closed the restaurant but continued serving the people of Encinal by cashing checks for local residents. Never one to slow down for long, she later opened a firework stand that became a cherished family tradition, trusting her grandchildren—even at young ages—to help run it and learn independence through experience.
Odilia was known for being strong-willed, protective, and fiercely devoted to her family. She never allowed anyone to take advantage of her or those she loved, and she taught her children and grandchildren to stand firm, work hard, and take pride in who they are.
In later years, after being diagnosed with dementia, her life gradually slowed. Even so, she remained a blessing to her family, surrounded by generations who loved her deeply and who continue to carry forward the values she instilled.
Odilia is survived by her sisters, Margot Sanchez (Raymond †) and Nena Colchado (Armando); her children, Candy McKinney (Hank), Leo Colchado, and Debra Colchado (Freddy); her grandchildren, Leroy (Veronica), RJ, Matt, AJ, Ryan, Eddie, Sara, Jovan, Alejandro, Amaryllis, and Destiny; and her great-grandchildren, Abram, Gabriel, Santiago, Jai, Avery, and Marin.
Odilia Catalina Colchado will be remembered for her strength, her generosity, and the lasting impact she made on her family and community. Her legacy lives on through all who were blessed to know and love her.
Pallbearers will be, Leroy Esparza, Matthew Chapa, AJ Chapa, RJ Hernandez, Feliciano Colchado, Jovan Colchado, Alejandro Gonzalez, Sarita McKinney. Honorary pallbearers are, Betty Gonzalez, Amado Colchado, Amaryllis Gonzalez and Destiny McKinney.
